Slusser Adventures: Montana

Last month Scott and I went on a 12 hour road trip adventure to Bozeman Montana to celebrate our niece Mikayla's 16th birthday. We greatly enjoyed spending time with the family and while it may seem shocking, we loved the road trip. It was so much fun spending time with Scott, just he and I and miles upon miles of Interstate 90.


Our trip started on a Thursday afternoon. I got off work and we hit the road to our first pit stop, Coeur d'Alene. Not much excitement here other than a quick dinner, McDonalds ice cream cones and then to bed so we could get an early start on the road.

Friday morning we got up, grabbed coffee (a definite must) and hit the road. We were on a mission to get to Bozeman! The scenery going through Lake Coeur d'Alene was incredible. We hit it on a foggy, fall morning and it was like something out of a movie! There as hours and miles to go so we killed time but talking about childhood memories, dancing like goofballs to Taylor Swift songs and just enjoying the drive.




Then, this happened...


I've seen hundreds of those "scenic pull off" signs and have never really stopped but always wondered how scenic they really are. Well we decided to do just that and take a small break, stretch our legs and have a mini adventure. We skipped rocks in the river, hiked up a rocky mountainside and made a memories we won't forget.  Most importantly though, we learned that sometimes you have to stray from the plan and be spontaneous. I am such a planner with every day life that stopping and just enjoying a moment "unplanned" was much needed.





You guys may not know this, but my husband is a kick butt rock skipper!

We even found a cave with ashes and remnants of a fire. Apparently we weren't the only spontaneous ones at the "scenic pull off"



Finally, after a few more hours and a quick drive-thru style lunch we made our way to Scott's sister's home. We have 12 total nieces and nephews, and 8 of them were there so you can imagine the ambush that happened when we arrived! They were excited to start the fun weekend ahead, as were we.

There was go-kart races, family dinners, party set up, kick-ball in the dark, horse riding, rodeo games and lots of memories made.

 The road trip home was made in one day and minimal stops, we couldn't wait to get home to our pup and our bed! One of the few stops we did make was in Ellensburg, where we picked up 60 pounds of fresh honeycrisp apples. Seriously still dreaming about how delicious those were. Wish Ellensburg wasn't two hours away!

Fall Recipe: Spaghetti Squash Lasagna Bowls



Besides the changing colors, rainy weather and the chance to wear my favorite boots, I love Fall for the change in produce. Squash is a hot commodity these days and since I'm trying to return to a healthy lifestyle I wanted to find a fun, easy, and healthy recipe to make for dinner this week. I looked to my trusty friend Pinterest and found this recipe from The Tasteful Pantry. I changed it up a tad by using less cheese to keep it more on the "lighter" side and it was delicious. Scott even loved it and asked if we could have it again soon!

While the recipe calls for two spaghetti squash, we only purchased one which left us with quite a bit of leftover sauce. We popped it in the freezer and will use it for a future meal. Nothing better than making one recipe that can create two meals!

You can change up this recipe however you'd like depending on what you have in your pantry. I didn't have fennel seeds or paprika so I left those out. I also didn't love the idea of a bay leaf in the mix so I kept that out as well. In a hurry? Grab a couple jars of your favorite sauce and add to ground beef or turkey. BOOM you have your sauce!

Oh and by the way, I promise next time I'll take more photos along the way! 

What you'll need (serves 4):
  • 2 small spaghetti squash
  • Olive oil
  • Salt & Pepper to taste
  • Lean ground beef or turkey
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon red pepper flakes
  • 1/2 teaspoon fennel seeds, crushed
  • 2 cloves of garlic, chopped
  • 1 (15 oz.) can crushed tomatoes
  • 1 tablespoon tomato paste (optional)
  • 1 bay leaf
  • 1/2 teaspoon paprika
  • 1 tablespoon balsamic vinegar
  • 1 tablespoon basil 
  • 1 cup low fat (2% or less) cottage cheese or ricotta
  • 1 cup part skim mozzarella cheese
Directions:

Preheat your oven to 400 degrees and slice your spaghetti squash in half lengthwise. Scoop out the seeds (similar to how you'd carve a pumpkin), brush with olive oil and season with salt, pepper and Italian seasoning. Place skin sides up on a cookie sheet or shallow pan covered in tin foil (easy clean up) and bake for 30 minutes or until tender.

While your squash is baking, brown the ground beef and chop your onion. Saute the onion in a separate pot until it starts to soften, about 5-6 minutes. Once soft, add the garlic, red pepper flakes and fennel and let them cook for about 1 minute. Next, add the crushed tomatoes, Italian seasoning, tomato paste, paprika, balsamic vinegar, bay leaf and basil. Bring the sauce to a boil then reduce heat to medium-low and let simmer while the squash bakes away.

Once the squash is done, remove from oven and scrap out small portion of the insides. Top each half with cottage cheese, then meat sauce, and finally mozzarella cheese. Place back in the oven on broil for 2-3 minutes until the cheese is bubbly and brown.

Pumpkin Pickin Season

This past weekend we officially rang in fall with a family trip to the pumpkin patch. We usually head down to Orting and visit Spooner Farms this time of year but the farm gets busier and busier every single year and we were looking for something more family friendly. Luckily we found that on our first new pumpkin patch adventure-- Hunter Family Farm in Olympia was so much fun for everyone, from ages 2-55.

The farm includes animals, a giant slide, a pillow jump, an ATV Adventure ride, duck races, a train ride, the obligatory corn maze and of course miles and miles of PUMPKINS!

We started out our morning with a few hand fulls of food for the goats which were adorable, especially the baby goats!



Then it was time for a couple of trips down the slide and since I'm lucky enough to be this little nugget's Tee-Tee, I got to join him on the first trip down.


Of course he is growing way faster than any of us would like to admit so he was ready to brave the slide on his own the second time. Seriously time, I'm going to need you to slow down...


After the giant slide there was some ATV Adventuring, some pumpkin sling shot action, a few trips around the old pedal powered carousel, and a long trek to the pumpkin fields where we had hundreds of great pumpkins to choose from. There were no crowds to worry about when maneuvering around with a wheelbarrow, and we even got to enjoy beautiful scenery.




Hunter Farms is a great family friendly environment for your fall adventures. The pumpkins are priced by size which is great for large families who likely fear the pumpkin scale, the rides are affordable, the food and drinks won't break the bank and you wont' have to fight traffic to get there or to find the perfect pumpkin.

If you love pumpkin, you MUST put these on your Fall bucket list. They're too darn good. In fact they've been hidden in my pantry and will be taken to the office to share with my fellow pumpkin-a-holics so that I don't devour the entire package.

It's Finally Fall

Everyone who knows me, knows that I absolutely love Fall. Who wouldn't love the changing colors of the season, falling leaves, crisp Fall air, boots & scarves, pumpkin patch visits, hot coffee, lots of family time, and of course Pumpkin Spice (PS)!!

About this time of year I start going on the look out for new PS goodies and luckily I've already found a few. Here's some that I recommend to any fellow PS lovers...


Fall In Love Pumpkin Spice Coffee from Paramount Coffee is so delicious. It has just the right amount of spice but doesn't over do it like other PS coffee blends I've tried. I was gifted another bag of Sweetie Pie: Pumpkin Pie that I can't wait to try. Thanks for the great gifts Caroline!


Speaking of Caroline, she got me the most wonderful PS themed birthday gift last week. Here we have PS coffee syrup, soap, a wonderful smelling candle and cookie mix! My friends know me all too well!


I  was lucky enough to find this loot at Target, I swear I find all the good stuff there. I mean really who doesn't love Target?! The Pumpkin Pie Spice creamer from International Delight pairs wonderfully with the PS coffee and makes me feel like I've gotten a Starbucks PSL. The yogurt was delicious and the Eggo waffles were to die for. Seriously not sure what I'll do with my life once they're put back in the PS vault until next year.


My latest find while grocery shopping this weekend were these PS english muffins. Toasted with a little bit of butter makes a great breakfast! I have a few other PS things left in my pantry to try and I am sure I'll find more throughout the coming weeks. For example, I don't think I can move onto the Winter season until I try these:

Our Fall is already off to a busy start, I leave for a much anticipated girls' trip to Iowa on Thursday, followed by a flight to North Caroline for a work event, then come home to a busy first weekend in October, and more travel. We literally have every weekend except one booked, but I'm super excited for the adventures coming our way. During some of our down time I want to finally get pictures up in our home, do fall/winter meal prep, try some recipes in my new dutch oven, carve pumpkins, decorate for the season, have a cozy movie night in, go to a scary movie, and just enjoy all that Fall has to bring.
